After selling their first successful restaurant, Collage owners Mike Hyatt and Cindy Stangby came to St. Augustine, Florida from arid West Texas to enjoy all that the little Oceanside town had to offer. With them came their desire to open a first-class dining establishment that reflected their eclectic personalities and tastes.
More than a decade later, Collage continues to provide their guests with a warm, inviting atmosphere and a menu that uses fresh local ingredients including seafood and produce. Choice steaks, lamb, veal, chicken, and pasta round out the menu.
The kitchen staff, under the watchful eye of the chef, prepares each dish from scratch and presents them with flair. As always, their wait staff provides impeccable service without being pretentious and makes your dining experience memorable.
