Located just a block off of St. George Street in the heart of the historic district, Collage serves dinner nightly from 5:30 PM.

After selling their first successful restaurant, Collage owners Mike Hyatt and Cindy Stangby came to St. Augustine, Florida from arid West Texas to enjoy all that the little Oceanside town had to offer. With them came their desire to open a first-class dining establishment that reflected their eclectic personalities and tastes.

More than a decade later, Collage continues to provide their guests with a warm, inviting atmosphere and a menu that uses fresh local ingredients including seafood and produce. Choice steaks, lamb, veal, chicken, and pasta round out the menu.

The kitchen staff, under the watchful eye of the chef, prepares each dish from scratch and presents them with flair. As always, their wait staff provides impeccable service without being pretentious and makes your dining experience memorable. The extensive wine list has something pleasing for your palate and your pocketbooks.

As an educational resource for the College, the Museum exhibits regional, national and international artists, and provides opportunities for critical engagement and exposure to a variety of exhibitions and personal interactions with visiting artists. The Museum challenges students, the Flagler community and the public to cultivate individual creativity, critical reflection, historical consciousness and respect for the free exchange of ideas. In this spirit, the Museum also hosts public programs, including artist talks, readings, panel discussions and film series that provide a platform for vital interdisciplinary dialogue.
