Late Risers’ founder, Chef Elizabeth Simms, is a classically trained chef with more than 10 years in the hospitality industry. She is fiercely passionate about local and seasonal cuisine and has had the opportunity to participate in that process all over the world in varying cuisines and venues.
Her journey in hospitality truly began working as part of the award-winning team at Michael’s Genuine Food & Drink in Grand Cayman. The creativity and talent of the chefs, along with the opportunities following that position to travel and soak up culinary culture across Europe, pushed her to cross the line – moving from front-of-house management into the kitchen with a comprehensive culinary education at L’Academie de Cuisine in Maryland.
For the next seven years, Chef Elizabeth worked for elite restaurants, catering companies, resorts, and butcher shops in Washington DC, Australia, and the Florida Keys – beginning as a Line Cook and quickly moving through the ranks as a Sous Chef and Chef de Cuisine. Chef Elizabeth has spent the last two years bringing her knowledge and skills to the challenge of food truck life in St. Augustine, constantly striving to create an excellent culinary experience for all guests. This effort continues now in the new Bar & Grille, opened in August 2020, at the St. Johns Golf Club.
Every dish Late Risers serves from the Bar & Grille or Food Truck is scratch-prepared and made to order. Each time you join them, you will enjoy an elevated hospitality ex
